The easiest way to prepare artichokes is to trim off the top quarter of the artichoke and the stem. Then, cut the artichoke in half and scoop out the fuzzy choke with a spoon. Place the artichoke halves in a pot with enough water to cover them and bring to a boil. Reduce the heat and let the artichokes simmer for 20-30 minutes or until the leaves pull off easily.
